Gaio Giannelli, creator and owner of Pozzo di Bugia, has created a trattoria with a unique atmosphere. For Giannelli, born into a family of well-known local butchers, flavor indeed rhymes with simplicity, taste and seasonality. There is never a shortage of handmade first courses and meat prepared in a wood-fired oven on the menu. In 2005, Ivano with his wife Lorenza and children Lucia and Simone decided to share their passion for food, opening the doors of their home. Thus was born Arginvecchio, which brings with it all those principles of those who know the value of the land and its fruits. A love that leads the family to transform the greenhouses of roses into vegetable garden land in a completely natural way from which to draw produce for the table. The restaurant immediately distinguishes itself with a cuisine that promotes seasonality, offering in the dishes ingredients from the garden and local products, selected with extreme care. Even in the elaboration of the most contemporary dishes, Arginvecchio never renounces the genuineness of the flavors and the influence of Tuscan tradition, but rather in the revisiting always seeks the exaltation and maximum expression of the authenticity of the raw material. Its proposal is not vegetarian, but certainly the vegetable world is at the center of the dish.
