A journey into Tuscan beauty and taste

Far from the noise of cities, in the wide expanses of Tuscany, lies a place rich in beauty, perfect for feeling in complete harmony with nature. We are at Villa La Commenda Concordia in Vicchio, in Mugello, the birthplace of Giotto and Beato Angelico. Upon arrival, we follow a path lined with centuries-old fir trees to reach the villa, which boasts wonderful interiors decorated with frescoes and refined paintings. Each room has a unique design and tells a story.

The history of Villa La Commenda Concordia is a story of beauty and wonder that would not be the same without its Ristorante Nascosto, where it is possible to taste traditional Tuscan recipes reinterpreted through the skilful and innovative use of the delicious Mugello products. The restaurant makes exclusive use of Tuscan products, carefully selected from local companies, favouring a zero-kilometre approach as much as possible.

In addition, the company boasts its own production of precious saffron, aromatic herbs and citrus fruits, which can be recognised and appreciated in most recipes. One example is the Risotto alla Commenda, so called because it represents the Villa itself, being prepared with its own saffron, rice from the Maremma and combined with veal sweetbreads purchased in Mugello from the Cooperativa Agricola Firenzuola, prepared with butter and blended with excellent Tuscan vino santo.

Another traditional Tuscan dish to savour is the pigeon, also purchased in Mugello and prepared in a frying pan. The breast is cooked with the skin on so as to keep it pink, while the thighs are roasted after long cooking. The innards are used to make Cibreo and the bones are used to prepare a reduced sauce, in order to concentrate its flavour to the maximum.

The most suitable wine is selected for each dish, with the aim of allowing diners to savour the true taste of the region's wine tradition, but also to surprise them with rediscovered grape varieties, special refinements, and natural and organic wines. An extraordinary circle of tradition, culture, pleasure and sharing.
