They are simple, good and crunchy Tuscan biscuits to prepare in autumn and especially on Halloween with your children!
The ingredients? Whipped white, sugar, chopped hazelnuts and flour.
Ideal to munch after the meal, maybe accompanied by a good vinsanto.
2 egg whites, 150 g finely chopped toasted hazelnuts, 200 g flour, 200 g sugar, 8g baking powder, 1 orange (or lemon) peel.
Whip the egg whites until stiff with a pinch of salt, then add little by little, in the order and always beating with whips, sugar, chopped hazelnuts, the rind of half a lemon or scratched orange, yeast and part of the flour until the whips make it to turn the dough.
Continue on the pastry board, taking all the flour and working with your hands to get a well homogeneous and firm dough.
When they are ready put them on the baking tray on top of the baking paper, spaced out so that they do not stick when they grow. Put them in a static oven at 180°, with heat above and below and halfway up.
Bake for 20-30 minutes, until they are a little beige, then turn off and let the biscuits cool in the semi-open oven for at least 15 minutes.
