"Frittella" of St. Joseph. The right recipe for Father's Day

A sweet greeting to all the fathers in the world

According to the tradition of the time, after the flight into Egypt with Mary and Jesus , Joseph had to sell pancakes to keep the family in a foreign land .
Precisely for this reason , throughout Italy, are the sweets of Father's Day, prepared to celebrate and celebrate the life of St. Joseph. Every city , province or region has its own variant but obviously the fundamental element that unites and distinguishes these cakes is that they must be fried in plenty of oil , just as tradition has it .

 500 ml of milk
 100 g of rice (I used the nano avenue )
 30 g of sugar ( plus extra for the coverage )
 60 g of flour
 25 g of butter
 1 egg (yolk and white separated )
 1 tablespoon rum
 5 g of yeast
 lemon peel
 1 pinch of salt
 seed oil for frying

PREPARATION

 
In a saucepan, put the milk, sugar , a pinch of salt and lemon peel cut into strips .

 
As soon as it starts to boil , remove the lemon peel and add the rice.

 
Cook until the liquid has all been absorbed. I have left almost 30 minutes. Stir often , especially towards the end , so the rice does not stick to the bottom.
Add the butter and let it melt .

 
Off and transferred to a plate and cover with foil. Let cool first to room temperature and then in the refrigerator . I waited three hours in all , but if we would be better to leave it in the fridge overnight .

 
Add rice to the egg yolk and rum .

 
Add flour and baking powder .

 
Whip the egg white mixture and incorporate it .

 
Heat the oil and plunge the rice fritters a few at a time. If you end up on the bottom, free them and you will see that rise to the surface. Rigiratele often so that they cook evenly . They will cook 4-5 minutes in all , if you see that after a minute already ' has darkened , lower a bit ' the flame , it means that the oil is too hot.

 
Let it dry excess oil .
