Flavours of sea: a unique experience at Ristorante Diverso

A cosy location to enjoy delicious and refined fish dishes in Florence

My concept of Diverso stems from the desire to give our guests a unique experience. Our proposals exalt the flavours of the sea through the selection of excellent raw materials, and a formidable mix of tradition and innovation that will give you authentic, fruit of our passion’. With these premises, chef Niccolò Giaffreda, at the helm of the Diverso restaurant, creates refined and sophisticated dishes that will take you on a unique sensory journey.

Born in Florence in 1998, Niccolò Giaffreda cultivated the dream of opening his own restaurant from an early age. He took his first steps towards this goal by attending the Higher Hotelier Institute in Florence, during which he did an internship at Cestello Firenze, where he then stayed to work at the end of his studies. In 2018, eager to further enrich his skills, he joined the team at Il Palagio restaurant, within the prestigious Four Seasons Hotel Florence. Not even the pandemic managed to stop him: it was during this period that he developed the strategies that would lead him to realise his dream, and so the Diverso restaurant was born.

The dishes, made with raw materials of the highest quality, will give you intense emotions and ever-changing experiences. Let yourself be won over by the refined cuisine, the result of creative and never predictable combinations, such as Chitarra with butter, anchovies, katsuobushi and lime, or Linguine di Gragnano ‘Pastificio Gentile’ cacio e pepe with raw seafood. And for those looking for a surprise, the Ventresca di tonno rosso alla parmigiana accompanied by courgette alla scapece will be an explosion of flavours.

Not only will you enjoy extraordinary dishes, but you will also feel the essence and passion with which each creation comes to life. At the Diverso restaurant, there is also the possibility of a unique experience: to be a privileged spectator behind the scenes of a culinary show. How? By booking the Chef's Table, you can watch the kitchen brigade at work, while the dishes are prepared before your eyes in the open kitchen.

Accompanying this journey into taste is a selection of niche wines, personally curated by Francesco Panfalone, general manager of Diverso and a profound connoisseur of the wine world. Only the finest labels find space on the menu, to enhance each dish with impeccable pairings.

To finish, you can choose the delicacy of the sweet Passion fruit, white chocolate and salted caramel or the creaminess of mascarpone, enriched by the sweetness of sour cherry.

The restaurant also houses a bar, where you can enjoy traditional and revisited cocktails that make your taste buds dance in a waltz of flavours.
