Here we are in San Vincenzo: although it has lost its "king" Fulvio Pierangelini, it still offers plenty of inspiration. Partly because Pierangelini's son, Fulvietto, continues the tradition and does so in the Il Bucaniere restaurant, a palafitta on the beach, designed by Massimiliano Fuksas.

The restaurant is located in a charming modern hut of wood and steel, scenically overlooking the beach of San Vincenzo. On the horizon, the profile of the islands of Capraia, Corsica and Elba stand out. The dishes are prepared by chef Deborah Corsi: a talented woman who seems to paint her own dishes. Deborah works mainly with local products, excellent fish and zero-kilometre vegetables.

La Pineta

One Michelin star. We are on the beach at Marina di Bibbona, on the edge of the pine forest with Marina di Cecina. There used to be a little bar on stilts, next to the La Pineta bathing establishment, where, more than half a century ago, a family thought of preparing some fish dishes for a clientele that had begun to frequent those beaches. The restaurant is still called La Pineta, with a beautiful room overlooking the sea, naval furnishings and dark parquet flooring. In the kitchen and in the dining room are the direct heirs of the great Luciano Zazzeri: his sons Daniele, a starred chef in the kitchen, and Andrea, in the dining room.
